How to Create Your Chicken Lollipops
Before the sauces come out, let’s prep our chicken. Turning drumsticks into lollipops gives them a cleaner, more fun presentation and makes them easier to eat on game day.
Instructions
- With a sharp knife, cut around the narrow end of the drumstick about 2 inches above the knuckle.
- Push the meat and skin down toward the thicker end, exposing the bone.
- Trim any excess skin or cartilage with kitchen scissors and shape the meat into a compact “lollipop” at the top.
That’s it — perfectly prepped chicken lollipops, ready for brining, saucing, and stealing the spotlight on your Super Bowl spread.
Dill Pickle Brine
While sauce gets all the credit for a good wing, the brine is actually the secret weapon. Our dill pickle brine balances acidity, salt, sweetness, and spice to ensure every bite feels like a game-winning field goal!
Ingredients
- 2 cups dill pickle juice
- 1-2 cups water
- 1 tbsp brown sugar
- 2 tbsp kosher salt
- ½ tsp ground black pepper
- 1 pinch of cayenne (adjust to taste)
Instructions
- Combine all ingredients in a large bowl or container and mix until fully dissolved.
- Submerge your prepared chicken drumstick lollipops in the brine.
- Brine overnight for best results. If you’re short on time, at least two hours will still add flavour.
- Remove chicken from brine and discard the liquid (do not reuse).
- Pat chicken dry.
- If grilling or roasting, lightly coat with olive oil and season with salt and pepper. If frying, additional seasoning is not necessary.

Instructions
- Add all ingredients to a medium-sized bowl.
- Stir until smooth and fully combined.

Ingredients
- ½ cup mayonnaise
- ½ cup sour cream
- ½ oz white vinegar
- ¼ tsp Worcestershire sauce
- ¼ tsp Frank’s RedHot Sauce
- 2 oz crumbled blue cheese
Instructions
- Combine all ingredients in a bowl.
